About our famous wood-fired pizza, made simply from the freshest and fewest ingredients.
Here is what makes our chemistry possible:
3 Days
Flour, yeast, salt, and water — that's all we use to make our dough. It sounds simple enough, but in order for it to build its flavor and obtain the right level of chew, we allow the yeast to ferment for three days.

All ingredients are not created equal, which is why we go to great lengths to work with local providers (like Zoe’s Meats!) when we can and we don’t cut corners when it comes to cheeses and sauces.

Nothing makes a pizza unique like a wood-burning oven. We use almond and apple wood to create a cooking environment that produces blistering char and crispy texture on our crust, which a standard oven could never achieve.
